Festivals without delicacies  are next to impossible; well for many of us Festivals is equal to good food and delicacies. So with outfit and accessories good food certainly can’t be off the list.

Here are few quick and delicious recipes that are sure to make your Eid a lot special.

Chicken Breadcrumbs Fingers:

Garlicky chicken strips with buttermilk marinade

 

Ingredients:

1- 2 boneless chicken breast

2-8 oz double cream (1 cup)

3- 4 cloves of crushed garlic (1 teaspoon)

5- 2 chopped green chilies

6-salt to taste

7-bread crumbs (2 cups)

8-oil for frying.

Method:

1.Cut the chicken breast into small strips, take a bowl and mix double cream, garlic, chopped green chilies and salt then fold chicken strips into that mixture. Set aside for about 10-15 minutes.

2. Take out the chicken strips from the marinade and coat thoroughly with the breadcrumbs.

3. Heat some oil in a pan and fry.

 BBQ Chicken Nachos:

This is simple, scrumptious and quick snack recipe.

Ingredients:

1- 4 cups roasted (shredded chicken breasts)

2-1 tbsp fresh lime juice

3- ¼ tsp ground cumin

4-¼ tsp chili powder

5- tortilla chips

6- 2½ cups shredded cheddar cheese

7-tomatoes (chopped)

8- jalapeno peppers (seeded and diced)

9- barbeque sauce

10- guacamole

11- sour cream

Method:

1-  Mix chicken, barbecue sauce, lime juice, cumin and chili powder in it over medium heat, reduce to a simmer and cook stirring occasionally for 10 minutes and then remove from heat.

2- Preheat oven to 350ºF.Spread a single layer of tortilla chips on the baking sheet and top it with half of the chicken mixture and 1¼ cups of cheese then place another layer of chips over it and top with remaining chicken and cheese. Bake for about 10 minutes, until cheese is melted and golden brown.

3- Garnish nachos with chopped tomatoes, jalapenos and barbeque sauce and serve with guacamole and sour cream.

2. Chili, Corn and Coriander Fritters:

These  finger-licking fritters that are so quick and easy to make!

Ingredients:

1- 2 cups frozen corn (thawed)

2- 1 long red chili (seeded, finely chopped)

3- 1/4 cup chopped fresh coriander leaves

4-  2 green onions (chopped)

5-  1/2 cup rice flour

6-1/4 cup plain flour

7-1/4 tsp baking powder

8-1 egg (lightly beaten)

9-salt and pepper to season

10-vegetable oil for shallow frying.

Method:

1-  Dry  corn with a paper towel.

2- Mix corn, chili, coriander, onion, flours and baking powder in it. Add egg, season with salt, pepper and stir to make a paste.

3- Deep Fry both sides until Golden Brown

4-Serve hot with chili garlic sauce.
